Ghee (Clarified Butter)

Ghee is lactose and casein free, great for dairy sensitive individuals

You can buy a good quality ghee such as Purity Farms 

1 lb unsalted organic Butter (preferably from grass-fed cows)

  1. Put the butter in a small baking dish.  Heat the butter in the oven at 200 F.
  2. Continue until the butter fully separates and a clear golden liquid is on top.  The solids will fall to the bottom.  This may take an hour or longer.
  3. Remove from heat while the liquid is a clear gold color
  4. Line a sieve with cheesecloth and place over a new pot or glass bowl.  While still hot, carefully pour the separated butter through the cheesecloth-line sieve.
  5. The strained golden liquid is ghee.  Pour the ghee into a glass storage containet.  Ghee will becove solid when refrigerated.  Ghee does not need to be refigerated and will keep for many months.
