You can purchase coconut flour or make your own from unsweetened coconut flakes.
- 1 cup unsweetened coconut flakes
- 4 cups filtered water
- Soak the coconut flakes in the water for 4 hours
- Blend the mixture in a blender or food processor until smooth
- Strain the mixture through a fine mesh sieve or use a cheesecloth. (collect the liquid too)
- Dry the coconut pulp in a food dehydrator or bake on a cookie sheet at 200 degrees F until dry
- Grind the dried coconut pulp ~ this is coconut flour
*The liquid strained out of the coconut mixture is coconut milk. Save the coconut milk to drink or for use in recipes.
